SeaSpire was conceived during the India Smart Protein Innovation Challenge organized by The Good Food Institute India and Gastrotope, winning in the plant-based seafood category. The team proposed an ideation-stage case to develop plant-based whole-cut fish fillets by harnessing to novel 3D food printing technology incorporating AI and machine learning. The team brings experiences from food science and chemical engineering disciplines.
