Umami Bioworks accelerates cell-cultivated seafood production through a cutting-edge, automated platform. Their ALKEMYST machine learning toolkit enhances the efficiency and speed of their product development process. The company extracts stem cells from fish cells and uses machine learning to optimize the growth conditions of the cells. The cells grow in large bioreactors, becoming fish muscle and fat, before they’re harvested for the production of a variety of seafood products, including sushi and fish fillets.
